As a young boy, Nicholas DiGiorgio ( Aka Nick Ravioli) was taught to make homemade pasta by his grandmother.
Nick's passion for pasta propelled him to study at the acclaimed Italian Culinary Academy in Parma Italy where he was awarded the Grand Diploma Degree.
The man knows his pasta.
He was accepted into The Summit Farmers Market and as luck would have it his stand was next to Brad and Hoboken Farms.
A friendship and partnership began on Sunday mornings.
Nicholas is in charge of every aspect of production. Eggs are purchased at Miller's Egg Ranch or The Hacketstown Co-op. Our wheat is Organic Durum Wheat Semolina produced by Molino Grassi.
